Keto Crustless Mini Cheesecake for one!
I knew that I wasn’t the only fan of keto crustless mini cheesecakes just for one. As many of you know, I attempted the world carnivore month challenge. What is the world carnivore month challenge? It is a challenge started by Dr. Shawn Baker. The only requirement is that you eat only meat and drink only water. You can have as much meat as you like. You eat when hungry and drink when thirsty. I did it for about 5 days. However, it was a fail for me. While I was doing this challenge, I craved sweets, especially cheesecake. I let my sweet tooth get the best of me. While doing this challenge I did what I love the most which was not the best idea.
I love looking at Instagram pics of delicious desserts so that I can draw inspiration. Am I the only one that likes to torture myself. I absolutely love all things sweet. Thank goodness for sugar substitutes. My favorite cheesecake of all time is New York Cherry Cheesecake. Because of my new keto lifestyle of no sugar, the traditional cheesecake was out of the question. But what if you’re like me and you probably wouldn’t want to make an entire cheesecake. One-piece always leads to another and yet another.
For those of you that count macros. This is not a rabbit hole that I’m sure you would like to go down. If you are like me, you just need a little something for one. Something to satisfy and to keep those sugar cravings at bay. Honestly, if I made a huge cheesecake. I don’t know if I could be trusted around it. I’d probably eat the whole cake. Why a crustless cheesecake? Simply, I’m not a fan of cheesecake crusts. I like to go right for the cake. The good stuff and usually leave the crust behind unless it’s a nut-based crust.
I came up with this delicious little keto mini crustless cheesecake for one recipe. It’s so easy to make and it requires only a few ingredients. If you are in the mood to share, simply double the ingredients. Are you ready for this deliciousness?

Ingredients
- 1 tablespoon Kerry gold melted Butter
- 2 tablespoons monk fruit or erythritol
- 4 tablespoons of softened cream cheese
- 1/2 teaspoon vanilla
- 1/4 cup heavy cream
Instructions
- In a separate bowl Cream together sugar, cream cheese and vanilla.
- In a separate bowl pour heavy cream and whisk until stiff peaks form, about 4 to 5 minutes. Use can also use an electric mixer also.
- Pour the whipped cream into the cream cheese mixture and stir well.
- Spoon mixture into your favourite bowl.
- Add strawberries (or the berry of your choice)
- Put in your fridge for about 20 minutes
- Enjoy
